Ingredients
- 5 cups of peeled and cut-up Irish potatoes
- 1 Tablespoon of salt
- Onion powder, to taste
- Garlic powder, to taste
- Cayenne pepper, to taste
- 2 teaspoons of Olive Oil
- 2 cups of grated cheddar cheese
Toppings (optional):
- Green onions or chives, finely chopped
Cooking Instructions
- Preheat the oven to 350 degrees.
- In a medium-sized pot, boil the potatoes in salted water to cover, seasoned with onion, garlic powder, and cayenne pepper, until tender. (About 20 minutes.)
- Drain and mash the potatoes. Place the potatoes in an oiled casserole dish and cover with cheese.
- Bake uncovered for 30 minutes.
