Three recipes to enjoy peaches this summer

A majority of America’s peaches are grown in California and the South and they are available most of the year, although summer is when they are in season.

This fruit was originally grown in China thousands of years ago and was brought to the Americas by the Spanish in the 1600s.

Now, there are many ways we can enjoy these fresh, juicy fruits.

Mixed Fruit Shortcake

Ingredients

- 1 cup peeled, diced kiwi fruit
- 1 cup fresh, frozen, or canned blueberries
- 1 cup peaches, fresh or canned in their own juice
- 1 cup sliced strawberries
- 2 Tablespoons sugar
- 4 small slices (1 ounce each) angel food or sponge cake
- 2 Tablespoons chopped fresh mint (optional)

Directions

- Wash hands with warm water and soap. Wash fresh fruits before preparing.
- Mix kiwi fruit, blueberries, peaches, strawberries, and sugar.
- Let sit for 30 minutes to juice up.
- Place a cake slice on each of 4 plates and divide fruit topping among them.
- Top with mint.
- Serve immediately.

Peach Cooler

Ingredients

- 2 cups fat free milk
- 1 cup drained canned light syrup peaches, sliced
- ½ teaspoon lemon juice
- ½ teaspoon nutmeg

Directions

- Wash hands with warm water and soap.
- Put milk, peaches and lemon juice in a blender.
- Blend well.
- Sprinkle with nutmeg.
- Serve cold

Peach-Melon Salsa

Ingredients

- Use fresh or frozen peaches. The lime or lemon juice adds flavor and keeps the peaches from darkening.
- 2 cups frozen peaches, sliced, thawed and drained
- 1 cup cantaloupe or 4 canned apricot halves, chopped
- ¼ cup onion, chopped
- 2 tablespoons lime or lemon juice
- 1 tablespoon fresh mint, chopped (optional)

Directions

- Wash hands with soap and warm water. Wash fresh fruits and vegetables before preparing.
- Chop peaches and place in a large bowl.
- Stir in cantaloupe, onion, lime juice and mint, if using.
- Refrigerate 30 minutes to blend flavors.
- Serve chilled.
