“I’m not a Cajun, but I love Louisiana food. So, I’ve got my Delta twist on Louisiana food,” Todd Dumas states.
Todd Dumas is the Chief Flavor Officer of Delta Roux and Que Food Truck.
Dumas is determined to give the folks down south from area codes 504 and 225 a run for their money when it comes to Cajun delicacies. He likes to stir the pot with a paddle while making his jambalaya with local chicken and sausage. He also serves up a fried bologna sandwich the size of a ribeye, as well as homemade cracklins and pork rinds.
Each item coming from north Louisiana Farms, and he makes his own boudin but putting a very unique twist on it-- a boudin egg roll.
While Dumas knows his restaurant on wheels will never take the place of a dine-in, sit-down experience, he knows that he is putting forth some of the finest farm-to-table faire north of I-10 and what is known as Cajun Country.
