The organic food market is booming. Sales reached a record $56 billion dollars in 2020.
Ryan Koory of Mercaris says that consumers bought more organic groceries in the first year of the pandemic, in nearly every category.
According to Koory, “Throughout 2020 pretty much every category, with the exception of snaps food grew by at least 10 percent, with the overall category growing by almost 13 percent.”
To meet demand, Koory says that farmers harvested more than 3.5 million acres last year. That is a 7 percent increase from the previous year.
