Avian Flu to Blame for French Foie Gras’s Poor Output

French foie gras output is set to drop for a third year in a row due to avian influenza.

Foie gras is a French delicacy made from goose or duck liver, fattened with grain. Millions of birds have already been culled, and the disease is spreading fast in western France. Most foie gras producers keep their large flocks outside. Output fell 20% last year, and industry leaders say this cold be their worst crisis ever.
